MuMa Restaurant in Fano boldly breaks from the city’s seafood-dominated tradition by offering a menu centered entirely around meat. From expertly grilled cuts to wild game and creative tartare, it’s a haven for barbecue lovers and fans of authentic, bold flavors.

For the first time, I found myself leaving a meat-focused restaurant in Fano feeling genuinely excited and impressed.

Why is this so surprising? In Fano, the local culinary tradition is heavily tied to seafood. Typically, if you’re craving a good steak or hearty meat dish, the solution has always been to drive inland. But not anymore.
I’ve compiled my own list of the best seafood spots in Fano’s Sassonia district, yet MuMa has completely rewritten the rules.

Discovering MuMa Restaurant

Strolling through Fano’s historic center, we turned into a small side street, Via San Giorgio, in search of a quiet spot with outdoor seating. Away from the hustle and bustle, we stumbled upon the perfect setting. Tucked at the end of the street, where the buildings narrow and the ambiance becomes more intimate, we found MuMa. Under a sleek canopy, five minimalist tables were set, accompanied by lounge music softly playing in the background.

And just like that, we discovered MuMa by chance.

In December 2020, MuMa opened its doors in the heart of Fano’s historic center. Its concept stood out immediately: a bold, all-meat menu in a town celebrated for its seafood. Expect no ordinary “land” offerings here—MuMa serves dishes featuring beef, venison, lamb, hare, pigeon, and woodcock, prepared with creativity and finesse.

The Concept

Behind this unique venture are three young, passionate, and skilled entrepreneurs. Their culinary vision blends traditional roots with innovative techniques, Asian influences, and unexpected flavor pairings. The result? A gastronomic journey that feels modern, fresh, and unforgettable.

It’s no surprise to learn that these talented chefs trained under the legendary Gualtiero Marchesi. Their expertise shines in every dish they serve.

The Menu

The MuMa menu is structured into four sections: “first course,” “second course,” “third course,” and “desserts,” replacing the usual antipasti, primi, and secondi. This setup encourages a step-by-step exploration of flavors.

You can order à la carte or opt for a tasting menu of three or four courses, priced at €30, €40, or €55 per person (drinks not included).

Upon arrival, we were warmly greeted and treated to a small amuse-bouche: a tempura bean pod with tomato sauce and mayonnaise—a delightful start to awaken the palate.

First Course

Beef Tartare

Knife-cut and served with salsa verde, tomato sauce, and a touch of Alicante. A visual masterpiece resembling the Italian flag, it’s almost too beautiful to eat. But after the first bite, there’s no going back—every forkful is more delicious than the last.

Venison Tartare with Miso Sauce and Raspberries

A standout dish featuring glossy, succulent venison complemented by miso sauce. The surprise? A raspberry “gelato” disguised as a small sausage, adding a refreshing contrast to the bold flavors.

Other first course highlights:

  • Quail Salad with celery, mustard, and zucchini blossoms
  • Smoked Guinea Fowl with pickled vegetables and wild fennel oil
  • Soft Egg with stracciatella, pea velouté, and toasted seeds

Second Course

Cappelletti with Charcoal-Smoked Pork Ragù

Generously topped with aged goat cheese, these cappelletti were a revelation. Though hearty, they felt surprisingly light, and the smoky, rich flavors lingered beautifully. A dish that nods to tradition while delivering something entirely unexpected.

Other second course options:

  • Braised Beef Ravioli with pasticciata sauce
  • Tagliatelline with lamb, fava beans, and pecorino
  • Porcini Mushroom Dumplings with hare, chervil sauce, and black truffle

Third Course

Seared Beef with Puree and Chard

Cooked rare to perfection, the beef melted in the mouth, enhanced by a velvety potato purée and flavorful chard soaked in the juices. Garnished with ultra-thin, crispy Parmesan wafers, this dish was both comforting and refined.

Other third course options:

  • Beef in Hunter-Style Crust with seasonal vegetables
  • Pork Toro with tempura onions and gratinated fennel
  • Pigeon with jus, roasted apricots, and orange reduction

Dessert

MuMa’s desserts mirror the innovation and balance found throughout the menu. Some standout choices:

  • Tropical Ingot
  • Chocolate Tart with Almond and Salted Caramel
  • Lemon Curd with Swiss Meringue and Pollen
  • Millefeuille with Ricotta Cream, White Chocolate, and Pine Nuts

We opted for the Chocolate Tart, and it was nothing short of extraordinary—a dessert in a league of its own.

Final Verdict

From the warm hospitality to the exceptional quality of the ingredients (even the sourdough bread is house-made), MuMa delivers a dining experience that’s as visually stunning as it is flavorful.

At €70 for two (including drinks, though no wine), the meal felt like a steal for the quality and creativity on offer.

Would I recommend it? Absolutely. MuMa isn’t just a restaurant—it’s an experience, one that surprises and delights at every turn in an unexpected setting.
